Apollo's Green Beans & Feta

Named after Apollo, the God of the Sun, this QUICK & EASY meal features a wonderfully seasoned sundried tomato broth over green beans, noodles, and vegetarian ground beef topped with a touch of salt found in either feta cheese or olives. 

But the real beauty of this dish is that all of the ingredients can be stored for months in your pantry or freezer making it something you can whip up when unexpected guests arrive for dinner or if you just haven't had the time to do your weekly shopping.

 

 

1st Put up a pot of boiling water to cook 1 lb of broad noodles

2nd Bake in oven vegetarian chop meat (crumbles) 
or 4 veggie burgers (which you can break into crumbles)

Next cook until tender
1lb whole green beans (frozen is ok)
&
1 large onion diced

In 3 cups of water re-hydrate 1 cup of sun dried tomatoes 
until they start to fall apart

Adding to this:
1tbs. Coriander
¼ tsp. Ginger
2 tsp. Cumin
1 tsp. Turmeric
1 tsp. Garlic
Black Pepper to taste

(By adding the spices at the beginning you allow them time to mingle & turn the sun dried tomato 'water' into a deeply flavorful broth)

When all is ready gather 4 bowls and 
layer ingredients in each bowl as follows:
Pasta
Fake chopped meat
Green beans & onions
Ladle sun dried tomato broth over top
Garnish with crumbled feta cheese 
or for vegans good quality olives (please: not from a can!)
[To keep the fat content down don't add more than 1 serving of feta per person (approx. a 1 sq. inch cube)]
