Vegan French Toast

Breakfast, the most important meal of the day, can often be the most unhealthy (bacon, eggs, cheese & buttered toast!). Here's a way to turn a traditional recipe in to a meal that's as satisfying to the soul as it is to the body because no animal products are used.

4 slices whole grain bread
½ cube soft tofu (8ozs)
1T nut butter (peanut, cashew, almond etc.)
1T maple syrup
1 cup soy milk (or other non dairy milk)
cinnamon
nutmeg
vegetable oil spray

PreheaT oven to 400

CrUmble tofu in blender.
AdD nut butter, maple syrup, 1 T soy milk, cinnamon & nutmeg to taste.
MiX till creamy.
POur remaining milk in wide shallow bowl.
DiP edges of bread in milk.
HOld bread in palm of hand.
SpOon tofu mixture evenly over topside & edges of the bread.
FliP carefully onto a baking sheet greased with vegetable oil spray (mixture side -face down).
RepeaT this procedure with the rest of bread.
SpOon remaining tofu mixture onto the topside of each slice of bread & smooth over.

BakE at 400.
FliP over after 15 minutes.
To make the French Toast crispy, after flipping SpraY the topsides with vegetable oil spray.
COok for 15 more minutes.
EaT.
